  1. Preheat the oven to 425°F/218°C. On a large baking tray, toss the cauliflower florets, olive oil, garlic powder, and paprika until evenly coated.
  2. Roast for 20 minutes or until golden. Drizzle with Buffalo sauce and roast for an additional 5 minutes.
  3. Divide the lettuce between bowls. Top with blue cheese, cucumber, green onion, and carrots. Add the cauliflower and cilantro.
  4. Make the dressing by combining Greek yogurt, buffalo sauce, lemon juice, honey, and water in a small bowl. Drizzle dressing over the salad and enjoy!
