- 1 large head of broccoli , finely chopped
- 3 carrots , grated
- ½ English cucumber , chopped
- ½ red onion , finely chopped
- 1 cup parsley , chopped
- ¼ cup hemp seeds
- ¼ cup pumpkin seeds , raw
- ¼ cup sunflower seeds , raw
- ¼ cup apple cider vinegar
- 3 tbsp olive oil
- 1 tbsp maple syrup
- salt and pepper , to taste

Instructions
- Combine the chopped broccoli, carrots, red onion, parsley, hemp seeds, pumpkin seeds, and sunflower seeds into a large bowl.
- In a small jar, mix together the vinegar, olive oil, maple syrup, salt, and pepper.
- Drizzle the dressing over the vegetables, tossing to combine. Let sit for 10 minutes. Enjoy!
