Ingredients
- 1 tbsp extra virgin olive oil
- ½ medium bell pepper , chopped
- 1 green onion , chopped
- 4 large eggs , whisked
- 4 taco-sized corn tortillas
- 2 tbsp salsa
- ½ medium avocado , sliced
- cilantro , to serve
- salt and pepper , to taste

Instructions
- Heat the oil in a nonstick pan over medium heat.
- Add the chopped pepper, and cook for 2 to 3 minutes. Add the green onion, cook for an additional 2 minutes, or until the vegetables have started to soften.
- Pour the whisked eggs into the pan, and season with salt and pepper. Use a spatula to push and pull the eggs across the pan as it cooks, until cooked to your preference.
- Meanwhile, warm the tortillas in the oven or in a pan, if preferred.
- To serve, top the tortillas with egg, salsa, avocado, and fresh cilantro. Serve with lime juice.
