- 2 eggs
- 2 bell pepper slices - about 1/3" thick
- 2 tomato slices - about 1/4" thick
- 1/2 tbsp olive oil
- sea salt + pepper

Instructions
- Coat a skillet with olive oil and heat over medium-high heat. Place the bell pepper slices in the greased pan and add the tomato slices inside the rings. Season with salt and pepper and let cook for 1-2 minutes. Crack the eggs directly into each ring and sprinkle with salt and pepper. (It's okay if some of the egg spills out!)
- Cook the eggs until the yolk has set or it has reached your preference. Remove from heat and enjoy!
So good may turn out to be on of my favourites.
Just tried this today, however I improvised with what I had on hand plus for whatever reason I cannot eat sliced tomatoes but I can any other way ?♀️? so I did a slice of orange bell pepper, added fresh mild Pico De Gallo in the middle and then my egg on top. Sprinkled with a lil sea salt and pepper. I only did half the serving and I also made some for my husband as well. I loved it and he did too !!!!
