  1. Coat a skillet with olive oil and heat over medium-high heat. Place the bell pepper slices in the greased pan and add the tomato slices inside the rings. Season with salt and pepper and let cook for 1-2 minutes. Crack the eggs directly into each ring and sprinkle with salt and pepper. (It’s okay if some of the egg spills out!)
  2. Cook the eggs until the yolk has set or it has reached your preference. Remove from heat and enjoy!
