Ingredients
- 1 lb extra lean ground turkey
- 1 tsp dried basil
- 1 tsp garlic granules
- 1/4 tsp dried chili flakes
- 2 tbsp Parmesan cheese , grated
- 1 tbsp parsley , finely chopped
- 1 large egg , whisked
- 1/4 cup quick oats
- 2 tbsp almond milk
- 2 pints cherry tomatoes
- 3 tbsp olive oil
- salt and pepper
- 4 cups arugula (to serve)
- 1/4 cup Parmesan cheese , grated

Instructions
- Preheat the oven to 400°F/204°C.
- In a medium bowl, combine the ground turkey, basil, garlic, chili flakes, parmesan cheese, parsley, egg, oats, and almond milk.
- Roll into 12 balls, roughly the size of a golf ball. Add to a large baking tray.
- Add the tomatoes to the baking tray. Drizzle with olive oil and season liberally with salt and pepper.
- Bake for 20-25 minutes, or until the tomatoes are blistered and the meatballs are fully cooked.
- To serve, top arugula with 3 meatballs per person, and divide the tomatoes evenly, topping with parmesan cheese.
