- 2 brown rice cakes
- 2-3 slices deli turkey (preferably nitrate-free)
- 2 tsp dijon mustard
- 1 tbsp Vegenaise or high quality mayonnaise
- 2 slices tomato
- 1/4 avocado - sliced
- salt + pepper

- Divide mustard and mayonnaise between the two rice cakes and spread evenly. Top each rice cake with turkey, tomato, avocado, salt, and pepper.
