Instructions
  1. Start by preheating the oven to 350 degrees F and slice the avocados in half. Place on a parchment-lined baking sheet.
  2. Crack the eggs into a mixing bowl, scoop out the yolk and place one into the center of each avocado half.
  3. Bake for about 15 minutes or until the egg yolks are set and then serve with salsa, crumbled bacon or ham, and shredded cheese.
  4. Garnish with chopped chives if desired.

  1. I made this for supper tonight. I drizzled lime juice and dry guac seasoning over the avocado then put the egg yolk in. Because it was humid today and my oven isn’t quite working right, I put them in the grill basket and baked them on the grill. Added a dollop of light sour cream – amazing!

      Not in this particular recipe, Pamela. Though I do think if you choose to use the egg white in this recipe, it would also be very yummy. 🙂
