Instructions
- Start by preheating the oven to 350 degrees F and slice the avocados in half. Place on a parchment-lined baking sheet.
- Crack the eggs into a mixing bowl, scoop out the yolk and place one into the center of each avocado half.
- Bake for about 15 minutes or until the egg yolks are set and then serve with salsa, crumbled bacon or ham, and shredded cheese.
- Garnish with chopped chives if desired.
I made this for supper tonight. I drizzled lime juice and dry guac seasoning over the avocado then put the egg yolk in. Because it was humid today and my oven isn’t quite working right, I put them in the grill basket and baked them on the grill. Added a dollop of light sour cream – amazing!

Do you use the egg white?
Not in this particular recipe, Pamela. Though I do think if you choose to use the egg white in this recipe, it would also be very yummy. 🙂
