Ingredients
- 1 rotisserie chicken - shredded OR 3 cooked chicken breasts - shredded
- 1/4 cup mayonnaise (Greek yogurt or Vegenaise works well too)
- 1 avocado
- 1/4 cup cilantro - chopped
- 1/8 cup slivered almonds
- salt + pepper
- 1 lime

Instructions
- Heat skillet on medium heat and add slivered almonds. Cook and stir until lightly toasted.
- In a large bowl, combine cooked chicken, mayonnaise, avocado, cilantro, salt, pepper, and the juice from 1 lime (adjust according to preferred taste). When almonds are toasted, add them to the mix and stir thoroughly. Serve over greens, in lettuce cups, or on healthy crackers.

Hi there! We just updated the recipe’s instructions. 🙂 The recipe calls for the avocado mashed up with the chicken, but you are welcome to slice the avocado on top if you prefer that!
