Ingredients
- 2/3 cup brown rice , rinsed (or 2 cups cooked brown rice
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 cups baby spinach
- 1 tbsp coconut oil
- 2 large eggs
- 1 avocado , sliced
- 1 green onion , sliced
- sesame seeds , to serve

Instructions
- Combine the rice and 1 ½ cups of water in a pot and bring to a boil. Add the sesame oil and soy sauce.
- Cover, and reduce heat to medium-low, simmering for 30 minutes.
- Remove from the heat and add the spinach. Let sit, covered for 10 minutes before fluffing with a fork.
- While the rice is cooking, heat the coconut oil in a skillet over medium heat, cook the eggs to desired doneness (overeasy, or overhard).
- Top the rice with the egg, and sliced avocado.
- Garnish with green onion and sesame seeds.
