  1. Combine the rice and 1 ½ cups of water in a pot and bring to a boil. Add the sesame oil and soy sauce.
  2. Cover, and reduce heat to medium-low, simmering for 30 minutes.
  3. Remove from the heat and add the spinach. Let sit, covered for 10 minutes before fluffing with a fork.
  4. While the rice is cooking, heat the coconut oil in a skillet over medium heat, cook the eggs to desired doneness (overeasy, or overhard).
  5. Top the rice with the egg, and sliced avocado.
  6. Garnish with green onion and sesame seeds.
