Ingredients

brown rice
, rinsed (or 2 cups cooked brown rice

tbsp
sesame oil

tbsp
soy sauce

cups
baby spinach
1
tbsp
coconut oil
2
large eggs
1
avocado
, sliced
1
green onion
, sliced
sesame seeds
, to serve
Instructions
Combine the rice and 1 ½ cups of water in a pot and bring to a boil. Add the sesame oil and soy sauce.
Cover, and reduce heat to medium-low, simmering for 30 minutes.
Remove from the heat and add the spinach. Let sit, covered for 10 minutes before fluffing with a fork.
While the rice is cooking, heat the coconut oil in a skillet over medium heat, cook the eggs to desired doneness (overeasy, or overhard).
Top the rice with the egg, and sliced avocado.
Garnish with green onion and sesame seeds.
