Ingredients
- 2 cups rolled oats
- 1 1/2 cups unsweetened almond milk
- 1/2 cup pure maple syrup
- 2 eggs
- 1 apple , skin removed and chopped
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1 tsp pure vanilla extract
- 1 tsp baking powder

Instructions
- Preheat the oven to 350 degrees F and grease a baking pan with coconut oil.
- Add the rolled oats, almond milk, pure maple syrup, and eggs to a mixing bowl and whisk.
- Add in the remaining ingredients and mix well.
- Pour the mixture into the greased baking pan and bake for 30-35 minutes.
- Enjoy warm, served over a bowl of unsweetened full-fat Greek yogurt or coconut milk yogurt if avoiding dairy.
- Store leftovers covered in the fridge.

This oat meal is so yummy! I added big scoop of Greek yogurt, drizzle of maple syrup, and a sprinkle of chopped pecans when for breakfast each morning this week and it was the perfect start to each day.
What size pan is best for this?
Hi Holly! It all depends how “thick” you want it. It looks like a loaf pan in the picture. When I made this, I used a 9 x 13 pan, and it worked well!
When I make it I use 8×8 baking dish!!
I switched the milk for homemade yogurt and added fresh diced strawberries. I make 5xs recipe and freeze. It’s amazing!
I love baked oatmeal. This is a great one. The blog Budget Bytes has some great ones too you might want to check out if you love this idea for the cold months. I love that it fills me up more than traditional oatmeal and doesn’t seem to mess with my blood sugar the way traditional oatmeal does.
Could I use honey instead of the maple syrup? I’m thinking the Log Cabin variety wouldn’t work in these recipes!!

I ended up using agave nectar instead of honey or maple syrup. Smells good!
My whole family loves this recipe! I make it before bed and we enjoy it in the morning with yoghurt on top. My kids even love eating it like a breakfast cake (cut in squares) and I feel much better about it then if I was feeding them coffee cake, etc. Thanks for the great recipe!
