Ingredients
- 8 oz cooked chicken - cubed or shredded
- 1 small apple - cored and chopped
- 1/3 cup chopped pecans
- 1/3 cup dried cranberries
- 2 stalk celery - diced
- 1/4 cup red onion - diced
- 3 tbsp quality mayonnaise or Vegenaise
- 1 tsp dijon mustard
- 2 tsp red wine vinegar
- salt + pepper
- 4-6 leaves lettuce

Instructions
- Mix mayonnaise (or Vegenaise), mustard, vinegar, salt, and pepper in a small bowl until well combined. Set aside.
- Combine chicken, apple, pecans, cranberries, celery, and onion in a large bowl. Toss with dressing. Serve on lettuce leaves.
This is seriously SO good. I’m shocked it had low rating. It is one of my favorites. I use Costco rotisserie chicken with this and it’s delish!
I have made this salad quite a few times and it never disappoints! One of my favorites that I’ve tried from TBL! It keeps so well in the fridge so I usually double it so we have leftovers!
Super yummy! When we run out of cranberries, I use dried cherries.
Wow, what a delicious and satisfying recipe! I used leftover rotisserie chicken that I had on hand and, I didn’t have cranberries so, I used raisins instead. So delicious!
I made this for my lunch today, it was quick and easy. It’s delicious! Healthy ingredients. Crunchy and sweet. I made in in a serving for one and it was the perfect amount.
