quality mayonnaise or Vegenaise

Instructions
Mix mayonnaise (or Vegenaise), mustard, vinegar, salt, and pepper in a small bowl until well combined. Set aside.
Combine chicken, apple, pecans, cranberries, celery, and onion in a large bowl. Toss with dressing. Serve on lettuce leaves.
