- 2 eggs
- 4 stalks asparagus - chopped
- 1 tbsp goat cheese
- salt + pepper to taste
- 1 tsp coconut oil (or oil of choice)

- Crack eggs into a bowl and whisk well. Heat coconut oil in a small skillet over medium heat. Add asparagus and cook 2-3 minutes until they just begin to soften. Add eggs and stir until cooked through. Sprinkle with goat cheese, salt, and pepper.
