Ingredients
- 1 tbsp peanut oil
- 1 large onion - peeled and chopped
- 1 1/4 lbs ground turkey
- 1/2 cup Asian peanut sauce
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce (or coconut aminos if you avoid soy)
- 1 cucumber - peeled and chopped
- 1/3 cup mint - coarsely chopped
- 12 large lettuce leaves

Instructions
- Heat peanut oil in a large skillet over medium-high heat. Add onion and sauté until it begins to brown (3-4 minutes). Add turkey and break up with a spoon while stirring. Cook through. Add peanut sauce, hoisin sauce, and soy sauce. Mix well. Stir in cucumber, fresh mint, salt, and pepper.
- Spoon mixture into lettuce cups and enjoy! This meal does well when prepared ahead of time. Simply add a bit of water when re-heating to keep it from drying out.

The best recipe!!!
This was okay for a quick meal but I found it very one dimensional. Also depending on the bottled peanut sauce and hoisin sauce you buy, it could be be heavy on the sugar and salt amounts.
