  1. Heat peanut oil in a large skillet over medium-high heat. Add onion and sauté until it begins to brown (3-4 minutes). Add turkey and break up with a spoon while stirring. Cook through. Add peanut sauce, hoisin sauce, and soy sauce. Mix well. Stir in cucumber, fresh mint, salt, and pepper.
  2. Spoon mixture into lettuce cups and enjoy! This meal does well when prepared ahead of time. Simply add a bit of water when re-heating to keep it from drying out.
