Ingredients
- 1/2 cup raw honey
- 1/4 cup unsweetened coconut flakes
- 1/4 cup slivered almonds
- 1/2 cup dried apricots - chopped
- 1 tbsp cocoa nibs or mini chocolate chips (or Enjoy Life chocolate chips if vegan or dairy-free)
- 1 oz unsweetened puffed rice cereal
- 1/2 tsp vanilla extract

Instructions
- Line a 9x5 pan with parchment. In a small pan, warm honey over medium heat until reduced by half (about 3 minutes). In a large mixing bowl, combine coconut, almonds, apricots, cocoa nibs, puffed rice, and vanilla; pour honey over mixture and mix well.
- Spoon mixture into prepared baking dish and press mixture into all corners of the dish. Refrigerate for 2 hours before eating.
