  1. Line a 9×5 pan with parchment. In a small pan, warm honey over medium heat until reduced by half (about 3 minutes). In a large mixing bowl, combine coconut, almonds, apricots, cocoa nibs, puffed rice, and vanilla; pour honey over mixture and mix well.
  2. Spoon mixture into prepared baking dish and press mixture into all corners of the dish. Refrigerate for 2 hours before eating.
