Ingredients
- 1 cup quick oats
- 1 cup whole wheat flour
- 1/4 cup ground flaxseeds
- 1.5 tsp baking powder
- 1.5 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1.5 tbsp unsalted butter or coconut oil , melted and cooled slightly
- 1 tsp pure vanilla extract
- 1/4 cup pure maple syrup
- 1/2 cup applesauce
- 1 medium apple , peeled and chopped
- 1/2 cup almonds , finely chopped

Instructions
- Preheat the oven to 350°F/176°C. Line a tray with baking paper.
- In a medium bowl, combine oats, flour, flaxseeds, baking powder, cinnamon, nutmeg and salt. Set aside.
- In a small bowl, combine the butter (or coconut oil), vanilla, maple syrup and apple sauce. Add to the dry ingredients, stirring to combine.
- Fold in the apples and almonds.
- Drop ~2 tbsp mixture onto the tray and flatten slightly.
- Bake for 11-13 minutes, or until golden. Let cool on a wire rack and enjoy!
