  1. Preheat the oven to 350°F/176°C. Line a tray with baking paper.
  2. In a medium bowl, combine oats, flour, flaxseeds, baking powder, cinnamon, nutmeg and salt. Set aside.
  3. In a small bowl, combine the butter (or coconut oil), vanilla, maple syrup and apple sauce. Add to the dry ingredients, stirring to combine.
  4. Fold in the apples and almonds.
  5. Drop ~2 tbsp mixture onto the tray and flatten slightly.
  6. Bake for 11-13 minutes, or until golden. Let cool on a wire rack and enjoy!
