- 4 large eggs
- 1/4 cup almond flour
- 1 tbsp ground flaxseed/linseed
- 1 tsp pure vanilla extract
- coconut oil , to grease the pan

Instructions
- In a medium bowl, whisk the eggs, almond flour, flaxseeds, and vanilla until smooth.
- Heat a nonstick pan over medium-low heat. Grease with coconut oil.
- Scoop ¼ cup batter into the pan, and swirl until it coats the bottom of the pan.
- Cook 2-3 minutes, or until the top is dry, flip and cook for an additional 30 seconds.
- Set aside, and repeat with all the batter.
- Roll and fold with your favorite toppings and fillings. Enjoy!
