  1. In a medium bowl, whisk the eggs, almond flour, flaxseeds, and vanilla until smooth.
  2. Heat a nonstick pan over medium-low heat. Grease with coconut oil.
  3. Scoop ΒΌ cup batter into the pan, and swirl until it coats the bottom of the pan.
  4. Cook 2-3 minutes, or until the top is dry, flip and cook for an additional 30 seconds.
  5. Set aside, and repeat with all the batter.
  6. Roll and fold with your favorite toppings and fillings. Enjoy!
