- 2 cups water
- 1 cup old fashioned rolled or gluten-free old fashioned rolled oats
- pinch of salt
- 1 tbsp pure maple syrup
- 1/4 tsp cinnamon
- 1 zucchini - shredded
- 2 tbsp walnuts -chopped

Instructions
- Pour water into a medium-size saucepan and bring to a boil. Add oatmeal and bring to a simmer. Stir often. Add a pinch of salt and shredded zucchini. Cook oatmeal for about 5 minutes or until it reaches your desired consistency. Add maple syrup, cinnamon, and chopped walnuts. Mix well before serving.
