Instructions
  1. Start by adding the avocado oil or coconut oil to the base of an Instant Pot and saute the onion and garlic for 5 minutes.
  2. Add the chickpeas, tomatoes, water, seasoning, and spinach. Stir well.
  3. Set the valve to sealing and cook on the manual setting for 20 minutes.
  4. Allow the pressure to naturally release. Serve with rice or cauliflower rice and cilantro.
  5. Cooking Tip: You can also make this in a slow cooker. First saute the garlic and onion in a skillet. Then combine in the slow cooker with the chickpeas, tomatoes, water, seasonings, and spinach and cook on low heat for 2 hours.

  1. Making this for the third time today, its a winner with all the family (even my 2 year old and 11 month old!). Today I’m trialling adding some diced sweet potato, to make it a little more hearty for this autumnal weather here in the UK.

    I thought this was pretty yummy but added some zucchini for a little more variety than just chickpeas & spinach. Next time I might add in cauliflower and diced tomatoes too! Don’t forget to top with Sriracha!

  3. Why is there no print option for this recipe? I’m on an I pad using the app. I also had to sign in to get to recipe central to my favorite list of recipes. I don’t understand why recipes won’t come up without a password but other areas of the app will.

  4. This recipe was delish, loved it! It’s will be a regular addition to our weekly plant-based meal night! Served it topped with fresh green onions and a green salad with apples…not necessarily an Indian side, but a fresh, springy accompaniment nonetheless. 🙂
