Ingredients
- 1 cup raw almonds
- 1 1/2 cup rolled oats or gluten-free rolled oats
- 1 cup pitted Medjool dates - packed
- 3 tbsp maple syrup
- 1/4 cup almond butter
- 1 tsp vanilla
- 1/4 tsp salt
- 1/4 cup dairy-free chocolate chips - (optional)

- Preheat the oven to 350 degrees F. Place almonds and oats on a baking sheet and roast in the oven for 10 minutes. While oats and almonds are toasting, add dates to a food processor and pulse until nearly smooth, about 1 minute. Date paste will be very sticky. Set aside. Let the almonds and oats cool and then using a knife roughly chop the almonds.
- In a small sauce pan, heat maple syrup and almond butter over medium heat until combined, add date paste and whisk into mixture. Remove from heat and add vanilla, salt, oats, almonds, and chocolate chips. Line a 9x9 pan with parchment paper and pour in the granola bar mixture. Using another piece of parchment paper, press down very firmly to help the granola bars stick together. Let set in the refrigerator for at least 1 hour and then cut into 12 bars. Store in an air-tight container in the fridge or freezer.
Stellar treat! The second time making the recipe I used regular dates, cooked them with a bit of water to make a paste and then added the remaining ingredients. I found them easier to make rather than using a food processor .
Is there anything you can substitute for the dates?
Figs or raisins might work! 🙂
