Ingredients
Turkey Burgers
- 1 lb ground turkey
- 1/2 red onion , diced
- 2 tbsp Italian parsley , chopped
- 1 egg
- 1 tbsp dijon mustard
- sea salt + freshly ground pepper
Coleslaw
- 1 small cabbage : use green, red, savoy or Napa cabbage
- 1/2 red onion , sliced as thin as possible
- 1 tbsp cider or wine vinegar
- 4 tbsp olive oil
- sea salt + freshly ground pepper

Instructions
Turkey Burgers:
- Mix all ingredients in a large bowl. Shape into uniformly sized patties and grill over medium-high heat until thoroughly cooked.
- Serve over a bed of lettuce with chopped vegetables.
Coleslaw:
- Tear off and discard the tough outer leaves of the cabbage. Cut into quarters and remove the core. Turn cut side down and slice crosswise into thin shreds.
- Mix cabbage in a large bowl with onion and salt.
- Prepare a vinaigrette by mixing together vinegar, salt and pepper. Stir to dissolve the salt and then whisk in olive oil.
- Pour the dressing over the cabbage and onions and mix well. Taste again for salt. Eat right away or let it sit for a while to let the flavors permeate and the cabbage soften. This salad is even better the next day.
