Ingredients
- 5 tbsp olive oil
- zest of one lemon
- 3 tbsp fresh lemon juice
- 3/4 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 3 tbsp chives , chopped
- 1/4 cup flat-leaf parsley , plus more for garnish
- 1 15 oz can cannellini beans , drained and rinsed
- 2 5 oz can albacore tuna , packed in water, drained, and broken into chunks
- 3 green onions , thinly sliced
- 4-8 thick slices large tomatoes

Instructions
- In a medium bowl, whisk together olive oil, lemon zest and juice, salt, pepper and chives. Add parsley leaves, beans, tuna and onions and stir gently until just coated.
- Arrange tomato slices on 4 plates and spoon tuna mixture on top, dividing evenly. Top each salad with a few parsley leaves if you like.
