Instructions
  1. Place quinoa and broth in a saucepan and bring to a boil. Once quinoa boils, cover and turn it down to a simmer and allow to cook until all the liquid is absorbed (approximately 20 minutes). Once cooked, remove from heat and transfer to a large bowl to cool.
  2. In a small saucepan over low heat, mix peanut butter and honey. Add in ginger, soy sauce/coconut aminos, vinegar, and olive oil. Stir until mixture is smooth and creamy. If mixture needs to be thinned, add a little bit of water. Add dressing to quinoa - you may not use all of it, so use an amount that feels right to you. Stir in cabbage, carrots, red pepper, cilantro, and lime juice. Top with cashews or peanuts and store in the refrigerator until ready to eat.

  1. This was surprisingly fantastic! I hesitated to make this because I’m not a huge fan of quinoa as far as taste and texture goes, but I am so glad I made this! I will make again soon.

  2. Kelly, I agree, that ratio does NOT seem right, I just made quinoa according to the package instructions, it should be a 2:1 liquid to quinoa ratio, so I did 1 cup of dry quinoa in 2 cups of chicken broth (or you could use water).
    This recipe did turn out delicious! I didn’t have rice vinegar so I used apple cider vinegar, and it turned out so tasty! 🙂

  3. I made this yesterday and the flavor is great, I think the 1c of peanut butter may be too much. I searched similar recipes online and they used 1/4 c peanut butter and the other sauce ingredients were the same or similar to this one. That would explain why the dressing/sauce was so thick and hard to mix into the quinoa. May try reducing next time.

    This is a lovely salad with great texture and it’s perfect to take for lunch! However next time I make it ill definitely be cutting the peanut butter back to 1/4 a cup that way I can taste all the other ingredients.

  5. Great, yummy salad enjoyed by all in my house. The dressing definitely makes too much and required more than “a little bit” of water to thin it out. I’m going to see if I can repurpose my dressing leftovers for peanut chicken wraps!
