- 1 tbsp olive oil (plus more for the pan)
- 7 bell peppers (1 chopped + 6 cleaned, tops removed, and reserved)
- 1/3 cup fresh cilantro - chopped
- 1/4 lb baby spinach
- 1 lb ground turkey
- 1 can black beans - drained and rinsed
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- pinch of cayenne
- 1/2 tsp sea salt
- freshly ground pepper

Instructions
- Preheat oven to 350 degrees F. Heat oil in a large skillet over medium-high heat. Add ground turkey and cook thoroughly (breaking up as you go). Add black beans, cook for another 3 minutes. Add spinach, chopped bell pepper, cilantro, chili powder, cumin oregano, garlic powder, cayenne, salt, and pepper. Cook for another 2 to 3 minutes.
- Place hollow peppers in a baking dish lined with foil. Fill peppers with taco mixture, return pepper top, cover with foil, and bake for 45 minutes (or until peppers are tender and juicy). Add toppings and enjoy!
