Ingredients
- 2 large white sweet potatoes (or orange if you prefer) - chopped
- 3 hard-boiled eggs - chopped
- 6 slices nitrate-free bacon - cooked and chopped (optional)
- 1 small red onion - diced
- 1 green bell pepper - diced
- 2 stalks celery - diced
- 1/2 cup high-quality mayonnaise or Vegenaise
- 1 tbsp dijon mustard
- 1 tsp smoked paprika
- salt + pepper to taste

Instructions
- Add potatoes to a large saucepan and cover with water. Bring to a boil over high heat and then reduce to a simmer for 10-15 minutes or until fork tender. Drain the potatoes and let cool.
- Combine mayonnaise, mustard, paprika, salt, and pepper in a large bowl and mix well. Add in sweet potatoes, eggs, bacon, onion, bell pepper, and celery and toss to coat. Serve slightly warm or at room temperature, or cover and refrigerate until serving.
