Ingredients
- 1 large sweet potato - peeled and cut in 1/2" cubes
- 8 large eggs
- 1 tbsp dijon mustard
- 1 tsp apple cider vinegar
- 1 tbsp olive oil
- 1 small onion - chopped (optional)
- 4 large kale leaves - ribs removed and torn into 2" pieces
- 1/2 cup goat cheese - crumbled

Instructions
- Preheat oven to 400 degrees F. Place sweet potato chunks in a medium size microwave-safe bowl and add 1/2 cup water. Cover and microwave on high for 5 minutes or until tender. Drain.
- Meanwhile, whisk together eggs, mustard, vinegar, salt, and pepper. Coat a large oven-proof skillet with cooking spray. Add oil and onion, sautéing until tender. Add kale and cook until just wilted, about 2 minutes. Add sweet potato and toss. Spread vegetables around the bottom of the skillet. Carefully pour the egg mixture over the vegetables. Cook for 3 minutes or until bottom of frittata is just set. Transfer skillet to oven and cook for about 10 minutes or until the entire frittata is set. Remove from oven, sprinkle with goat cheese and enjoy!
