- 1 large sweet potato
- 1 tbsp olive oil
- sea salt + pepper
- 1 egg
- 1 slice cooked bacon (optional)*

Instructions
- Preheat oven to 425 degrees F. Wash and dry the sweet potato. Pierce the sweet potato with a fork and then rub the potato with olive oil and sprinkle with salt and pepper. Place the potato on a baking sheet and bake for 45-60 minutes, or until potato is tender.
- Once sweet potato has cooled, cut out an oval in the top of the sweet potato and scoop out about 1/4 cup of sweet potato flesh or about the size of one egg to create a well. Sprinkle the potato with salt and pepper and place bacon in the bottom of the well.
- Carefully crack the egg into the well and bake for 15-20 minutes until egg has reached desired doneness. Top with hot sauce and enjoy!
Recipe Notes
For a vegan option, bake potato as instructed and top with 1 tbsp of almond butter and one sliced banana.
Meal prep tip: prepare baked sweet potato during your weekly meal prep. Simple add the egg and bake in the morning for a delicious and easy breakfast.
This was delicious. I didn’t use the bacon, but the egg and sweet potato combo was great! I did add a bit of ketchup though because I’m 100% pro eggs and ketchup 🙂
