Ingredients
- 1 large sweet potato , diced into ½ inch pieces
- 1 14 oz can black beans , drained and rinsed
- 2 tbsp extra virgin olive oil
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp oregano
To serve:
- 4 whole wheat tortillas , or gluten-free alternative
- 1 avocado , sliced
- ¼ cup salsa
- ¼ cup shredded Jack cheese , or non-dairy alternative

Instructions
- Preheat the oven to 375F. In a large bowl, combine the sweet potato, black beans, olive oil, chili powder, paprika, cumin, garlic powder, onion powder, and oregano.
- Spread onto a baking sheet and bake for 25 to 30 minutes, or until the sweet potatoes are fork tender.
- Once cooked, divide the mixture between the four tortillas. Top with avocado, salsa, and cheese. Fold in the sides, and tightly roll. If desired, cook for 2 to 3 minutes in a hot frying pan.
