Instructions
  1. Preheat the oven to 375F. In a large bowl, combine the sweet potato, black beans, olive oil, chili powder, paprika, cumin, garlic powder, onion powder, and oregano.
  2. Spread onto a baking sheet and bake for 25 to 30 minutes, or until the sweet potatoes are fork tender.
  3. Once cooked, divide the mixture between the four tortillas. Top with avocado, salsa, and cheese. Fold in the sides, and tightly roll. If desired, cook for 2 to 3 minutes in a hot frying pan.
