Ingredients
- 1 lb split peas
- 6 cups vegetable stock
- 1 tbsp olive oil
- 1 yellow onion - chopped
- 2-3 cloves garlic - minced
- 1/4 tsp thyme
- 1/4 tsp pepper
- 3/4 tsp sea salt

Instructions
- Sift peas to remove any bad pieces. Heat olive oil in a large pot over medium-high heat. Add onions, garlic, thyme, salt, and pepper. Sauté until onions start to brown. Add stock and peas, bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer for 60 minutes or until peas are soft. Stir occasionally. Prior to serving, ladle all or some of the soup into a blender to purée. Serve warm.
