Ingredients
- tbsp extra virgin olive oil
- ½ yellow onion , chopped
- 2 cloves garlic , chopped
- 1 400g block extra firm tofu , crumbled
- 1 tbsp nutritional yeast
- ½ tsp sea salt
- ¼ tsp turmeric
- 2 cups packed fresh baby spinach
- 2 tbsp tahini

Instructions
- Add the oil to a skillet over medium-high heat. Add the onion, and cook for 3 to 5 minutes, or until it begins to soften.
- Add the garlic, crumbled tofu, nutritional yeast, sea salt, and turmeric. Cook for an additional 3 to 5 minutes, stirring occasionally.
- Add the spinach to the skillet, and let cook for 1 to 2 minutes, until wilted.
