- 2 tangerines - peeled and separated
- 2 tsp sunflower seeds
- 1/4 tsp sea salt
- 1/4 tsp fresh ground pepper
- 1 lb sea scallops - patted dry
- 1 tbsp oil

- 2 tbsp extra virgin olive oil
- 2 tbsp orange juice
- 4 tsp white wine vinegar
- 1 tbsp minced shallot
- 2 tsp fresh dill or tarragon - chopped
- 1 tsp dijon mustard
- salt + pepper to taste

Instructions
- Whisk dressing ingredients in a bowl, set aside. Combine spinach, tangerines, and sunflower seeds in a bowl. Toss with vinaigrette and divide evenly among 4 plates.
- Heat oil in a large skillet over medium-high heat. Add scallops and cook until they develop a golden crust and are opaque throughout. Serve over salad and enjoy!
