Ingredients
- 3 cup romaine lettuce chopped
- 1 bell pepper chopped
- 1 (14 oz) can black beans drained & rinsed
- 1 (14 oz) can sweet corn drained & rinsed
- 1 cup cherry tomatoes halved
- 1 large avocado peeled, pit removed & diced
- 1/2 red onion chopped
- creamy cilantro lime dressing:
- 1 avocado peeled, pit removed
- 1/4 cup plain Greek yogurt
- 1 cup cilantro stems removed
- 2 cloves garlic
- 1 lime juiced
- sea salt + pepper
- 2 tbsp olive oil

Instructions
- In a food processor, combine dressing ingredients (except the olive oil) and pulse until smooth. Drizzle in the olive oil while pulsing to slowly combine.
- Add lettuce to a large serving bowl and top with bell pepper, black beans, corn, tomatoes, avocado, and red onion. Add dressing to taste and enjoy!
This is so good! My whole family loved it. Next time we might just add some meat & put it over rice, dinner complete!
