Ingredients
- 6 large eggs
- 1/3 cup milk
- 1 tbsp fresh parsley , chopped
- 1 tbsp fresh dill , chopped
- 1 tbsp lemon zest
- 1 tbsp extra virgin olive oil
- 1 cup roasted vegetables , leftovers work great
- 1 cup fresh baby spinach
- 1/3 cup chopped smoked salmon
- 1/3 cup crumbled feta cheese

Instructions
- Preheat the oven to 400F.
- In a large bowl, whisk the eggs and milk until smooth. Add the parsley, dill, and lemon zest.
- Add the olive oil to an 8-inch pie dish. Add the vegetables, spinach, and smoked salmon to the oiled dish. Pour the egg mixture overtop, and sprinkle with feta cheese.
- Bake for 16 to 18 minutes, or until the edges are browned and the eggs are set.
- Let cool before slicing. Enjoy!
