Ingredients
- 1 tbsp coconut oil
- 1 lb ground turkey
- 1/2 of a red onion , chopped
- 1 cup spinach
- 1/2 packet taco seasoning (Simply Organic brand has a great taco seasoning!)
- 1 tsp dried oregano
- 1 tbsp freshly squeezed lime juice
- 3/4 cup tomato sauce
- 1/4 cup water
- Your favorite taco shells for serving (Siete makes a great grain-free option if you are looking for grain-free alternatives!)
- 1/2 cup salsa
- 1/2 cup guacamole
- Shredded mozzarella cheese for serving (optional)

Instructions
- Start by adding the coconut oil to a large skillet over medium heat and sauté the ground turkey for about 5 minutes to brown.
- Transfer the turkey to the base of a slow cooker and add the red onion, spinach, taco seasoning, oregano, lime juice, tomato sauce, and water. Cook on high for 2 hours.
- Once cooked, serve with taco shells, salsa, guacamole, and shredded cheese.
Alternative Cooking Methods:
- You can also make these in an Instant Pot! Simply brown the ground turkey using the saute setting in the Instant Pot and then add the onion, spinach, taco seasoning, oregano, lime juice, tomato sauce, and water. Cook on the manual setting for 10 minutes. Allow the pressure to release on its own, or very carefully move the value to the “venting” setting for a quick release.
- You can also easily make this in a pot over the stove! Simply eliminate the extra water, and just use the sauce and lime juice as your liquid base. You will want to saute the turkey to brown and then add the onion, spinach, taco seasoning, oregano, lime juice, and tomato sauce. Bring to a boil and then reduce to a simmer. Simmer for about 10-15 minutes or until the sauce thickens.
