Instructions
  1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper and cook sweet potatoes for 60 minutes (or until tender). While sweet potatoes bake, heat olive oil in a skillet over medium heat. Add onions and sauté until tender. Add garlic and sauté for another 1-2 minutes.
  2. Next, add the lentils or ground beef/turkey, and cook until browned. Add spices, coconut sugar (or honey), and bell peppers. Next, add the diced tomatoes and tomato paste. Mix well and simmer for about 15-20 minutes. Season with salt and pepper to taste.
  3. When the sweet potatoes are done cooking, allow them to cool enough to slice in half. Scoop out a portion of each sweet potato half and add it to the beef mixture. Mix well and spoon the mixture back into the sweet potatoes (much like a twice-baked potato). Or just spoon over baked sweet potatoes and enjoy!

    Made this with ground beef. Added some all seasoning, extra garlic, a little thyme and a couple sprinkles of red pepper. Everyone liked it. That’s a huge win in my house.
