Ingredients
- 4 sweet potatoes
- 2-2 1/2 cups cooked lentils or 1 lb grass-fed beef or 1 lb ground turkey
- 1/2 yellow onion - chopped
- 1 green bell pepper - chopped
- 1 red bell pepper - chopped
- 1 clove garlic - minced
- 1 tbsp chili powder
- 1 tsp cumin
- 2 tsp coconut sugar or raw honey (optional)
- 1 (14 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 tbsp olive oil
- salt + pepper

- Preheat oven to 400 degrees F. Line baking sheet with parchment paper and cook sweet potatoes for 60 minutes (or until tender). While sweet potatoes bake, heat olive oil in a skillet over medium heat. Add onions and sauté until tender. Add garlic and sauté for another 1-2 minutes.
- Next, add the lentils or ground beef/turkey, and cook until browned. Add spices, coconut sugar (or honey), and bell peppers. Next, add the diced tomatoes and tomato paste. Mix well and simmer for about 15-20 minutes. Season with salt and pepper to taste.
- When the sweet potatoes are done cooking, allow them to cool enough to slice in half. Scoop out a portion of each sweet potato half and add it to the beef mixture. Mix well and spoon the mixture back into the sweet potatoes (much like a twice-baked potato). Or just spoon over baked sweet potatoes and enjoy!
Made this with ground beef. Added some all seasoning, extra garlic, a little thyme and a couple sprinkles of red pepper. Everyone liked it. That’s a huge win in my house.
