Ingredients
- 1 large gluten-free or whole-wheat tortilla
- 1 tbsp olive oil
- 1 small sweet potato - diced
- 1 small red onion - diced
- 1/2 cup black beans - cooked
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- salt + pepper to taste
- 1 egg
- 1/2 avocado - sliced
- 2-3 tbsp fresh salsa

Instructions
- Heat olive oil in a medium sauté pan over medium-high heat. Add sweet potatoes and red onion. Sauté until potatoes are tender, about 10 minutes. Add black beans, cumin, chili powder, garlic powder, salt, and pepper, and cook for another 2 minutes until beans are warmed through.
- Remove from heat and set aside. Whisk egg in a small bowl and pour into the sauté pan over medium heat. Cook egg until it is thickened and no visible liquid remains.
- Warm the tortilla in the microwave for 30 seconds. Layer the tortilla with potatoes, onions, beans, and eggs. Add avocado and salsa to the center of the tortilla, roll up, and enjoy!
