- 1 lb shrimp - uncooked, peeled, and deveined
- 8 large mushrooms
- 1 large pepper - cut into 1/2 inch pieces
- 8 cherry tomatoes
Marinade Ingredients
- 3 tbsp white wine vinegar
- 1 tsp dijon mustard
- 1/4 cup olive oil
- 1/2 tsp onion powder
- 1-2 cloves garlic - minced
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/2 tsp basil
- salt + pepper to taste

Instructions
- Whisk marinade ingredients together in a small bowl. Pour marinade into a Ziploc bag and add shrimp. Allow shrimp to marinate in the fridge for approximately 2 hours.
- Remove shrimp from marinade (discard marinade). Thread shrimp and veggies onto kabobs. Grill kabobs over medium heat until shrimp turn pink and are cooked through.
