Ingredients
- 3 cups brown rice - cooked (can substitute cauliflower rice)
- 2 tbsp olive oil
- 1 lb shrimp - peeled, deveined, and chopped into chunks
- 2 cloves garlic - minced
- 2 carrots - peeled and diced
- 1/2 cup frozen peas
- 1/2 cup fresh or frozen green beans
- 5 large scallions - chopped
- 2 cups diced fresh pineapple
- 1/2 tsp ginger powder
- 3 tbsp soy sauce or coconut aminos

Instructions
- Heat wok (or large sauté pan) to high heat and add olive oil. When hot, add shrimp and cook until pink (2-3 minutes). Remove from pan and set aside. Add garlic and carrots to the wok and sauté for about a minute. Stir in peas, green beans, and scallions and cook for 3-4 minutes, stirring constantly. Stir in rice, pineapple, ginger powder, and soy sauce.
- Cook until heated through, about 2 minutes. Add shrimp back into the mixture, remove from heat, and serve immediately.
I made this for dinner tonight and it was loved by all! I made slight changes to use what I had on hand. I used a yellow onion chopped in place of scallions and left out the green beans. We also had scallops so I made those to add. I think it would also be good with chicken, We will be having this again!
