Ingredients
- coconut oil or avocado oil , for cooking
- 1/2 cup olive oil
- 3 tbsp chopped poultry herbs of choice (such as thyme, rosemary, sage, oregano)
- 1 tbsp garlic , minced
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1.5 lb turkey tenderloin
- 2 small russet potatoes , sliced
- 2 medium sweet potatoes , cubed
- 1 yellow onion , sliced
- 3 stalks celery , chopped
- 2 carrots , chopped

Instructions
- Start by preheating the oven to 350 degrees F and grease a large sheet pan with oil of choice.
- Add the olive oil, poultry herbs of choice, garlic, salt, and pepper to a mixing bowl and mix well. Set aside.
- Add the turkey tenderloin to the center of the sheet pan and drizzle with ½ of the olive oil and herb marinade. Cook for 30 minutes.
- Remove from the oven and add the sliced russet potatoes, sweet potato cubes, onion, celery, and carrots to the sides of the pan, surrounding the turkey, and drizzle with the remaining olive oil and herb marinade. Return to the oven and bake for another 30-40 minutes or until the turkey is completely cooked through.
- Serve with fresh cranberry sauce if desired!
