- 1 tbsp goat cheese - crumbled
- olive or coconut oil
- salt + pepper to taste

- Heat oil in a small skillet over low-medium heat. In a separate bowl, whisk eggs with a fork for 30 seconds. Pour eggs into pan, add spinach, and push around with a spatula until eggs are cooked, yet still fluffy. Sprinkle with crumbled goat cheese, salt, and pepper. Serve warm.
