- 1 lb fresh salmon fillet
- 1/2 cup almond flour
- 1 egg
- 2 green onions - sliced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tsp lemon juice
- 1 clove garlic - minced
- 1/2 tsp sea salt
Avocado Slaw Ingredients
- 1 avocado - pit and skin removed
- 1/3 cup high-quality mayonnaise or Vegenaise
- 1 clove garlic - minced
- juice of 1 lime
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 8 oz crushed pineapple - drained
- 2 green onions - sliced
- 1 jalapeño - seeds removed and diced (optional)
- sea salt + pepper

Instructions
- Remove skin from salmon and cut the fillet into very small pieces in a large bowl. Add almond flour, egg, green onions, oregano, thyme, lemon juice, garlic, and salt. Mix well and then form four even-sized burger patties. Preheat the grill pan or outdoor grill to medium-high heat. Cook about 4 minutes on each side, until cooked through.
- In a medium-sized bowl, add avocado, mayonnaise, garlic, and lime juice. Using a fork, smash the avocado and thoroughly combine, seasoning with salt and pepper to taste. Add cabbage, carrots, pineapple, green onions, and jalapeño. Toss until the cabbage mixture is coated. Serve over salmon burgers.
