- 1 cup pitted Medjool dates
- 4 oz 70% dark chocolate (or Enjoy Life chocolate chips if vegan or dairy-free)
- 2 oz pecan halves and/or almonds
- coarse sea salt

Instructions
- Place dates in a food processor (if dates are really hard, soak them in warm water first for a few minutes) and process the dates until smooth. Slightly wet your hands and roll the mixture out into 12 balls and place on a parchment-lined baking sheet. Press 3 nuts into each date ball and then place the baking sheet in the freezer for 20 minutes.
- While the date balls are setting, use a double boiler (or microwave) to melt the dark chocolate. Using a spoon, pour a small amount of chocolate over each date and sprinkle with a pinch of sea salt. Place the baking sheet back in the freezer to set for 10 minutes.
- Keep turtles cold and store in freezer until ready to serve.
