Ingredients
- 2 sweet potatoes
- 1 cup black beans - drained and rinsed
- 1 tomato - chopped
- 1 clove garlic - minced
- juice from 1/2 lime
- 2 tbsp cilantro - chopped
- 1/4 tsp cumin
- 1/4 tsp chili powder
- sea salt + pepper
- 2 tbsp plain Greek yogurt (optional)

Instructions
- Cook sweet potatoes in the microwave for 5-10 minutes or in the oven for 45 minutes at 400 degrees F. In a medium saucepan, combine black beans, tomato, garlic, lime juice, cumin, chili powder, salt, and pepper. Heat over medium-low heat until warmed through.
- Cut sweet potato in half and gently separate the two sides. Fill with tomato/bean mixture and top with cilantro and a dollop of Greek yogurt.
I make these and add in corn and shredded chicken to the mix before adding to the sweet potato. I also scoop out some of the potato to add to the mixture to make it a twice baked version. My husband loves these and they make a great meal!

I just made a half serving of this for lunch with some leftover cooked sweet potato and it was delicious! Made it just as described and it is perfect. Will be making this again!
