Instructions
  1. If possible, prepare the quinoa ahead of time so it has time to cool.
  2. Combine the shallots, garlic, lemon juice, zest, and a large pinch of sea salt together in a bowl. Let the shallots and garlic macerate for least 5 minutes. Whisk in tahini and olive oil along with another pinch of sea salt. Adding a splash of water her or there if it seems too thick. (Note: you may not need to use all of the dressing.)
  3. In a large bowl, combine the dressing and quinoa until quinoa is well coated. Mix well. Add remaining salad ingredients and enjoy! This salad would also be delicious with a bit of crumbled feta, sunflower seeds, olives, or chopped tomatoes.
